What is Acrylamide?
Acrylamide is a chemical compound that forms naturally in coffee during the roasting process. It's classified by the World Health Organization (WHO) as "probably carcinogenic to humans" and is found in virtually all roasted coffee worldwide.
Traditional coffee roasting methods create acrylamide as a byproduct of the Maillard reaction—the same process that gives coffee its rich flavor and aroma. Until now, eliminating acrylamide meant sacrificing taste.
